Primi Balat, the new address of pasta lovers with its original concept and decoration, opened its doors. Primi, with its special menu prepared under the consultancy of its chef from Italy, is the sister establishment of Forno, which is also located in Balat and is also among the Denge Businesses. We listened to Primi Balat and the industry, which is in service every day of the week except Wednesdays, from its Founding Partner Jeffrey Tucker.

Primi Balat opened its doors this year as an Italian restaurant. In fact, we had a cafe that we opened in the same place in 2014. We wanted to do something different this year. I lived in Italy for 20 years, so I have a good command of Italian cuisine. There is no other place in Balat that serves Italian cuisine. Working with a chef from Italy to advise us, we prepared our menus and opened our doors. We can say that we went on an adventure and we are going quite successfully at the moment.

What is the secret of your success? What do you need to do well in this industry? What advice would you give to new entrepreneur candidates who want to enter the sector?

Recently, new places are opening in Istanbul in the food and beverage sector. But from what I’ve seen, there are very few businesses that do anything different. For example, a lokma maker became a fashion and everyone became a lokma maker. Lahmacuncu was opened, many lahmacun was opened next to it. My advice is to be original and creative by serving other businesses on different subjects. When you differentiate, you attract people’s curiosity and if you also provide quality service, then you have regular customers in the sector. That’s why we wanted to focus on Italian cuisine this year. In fact, there are 1-2 businesses that only make Italian pasta. But since it will be the first time in Balat, we decided to open an Italian restaurant and only serve pasta. Of course, we also showed our difference while doing this… All our pastas and sauces are natural, additive-free and completely our own production. We are also very meticulous about by-products. We find manufacturers with the same perspective and work only with them.

In your opinion, what are the main problems of the food and beverage industry? Are you optimistic or pessimistic about the future of the industry? Why?

The food and beverage industry is an industry with an open future. In all markets, in Europe, Turkey and elsewhere, even in times of crisis, people do not stop eating and drinking. Therefore, I think it is the right step to invest in this sector. Of course, there are many problems as well. For example, it is very difficult to find qualified personnel in Turkey and there are very few places that train personnel in this field. That’s why we have difficulties and we give our own training to our employees as much as we can. However, we still believe that it is an open sector.

Why did you choose Arkhe? What did this choice bring to your business? Can you evaluate the before and after?

When you are in this industry, you have to do some things professionally. The most important thing is to provide fresh foods and to keep the service quality high. People want to get their money’s worth. Therefore, the more satisfied they are, the more your customer portfolio increases. One of the most basic requirements to achieve this is technology. We met with Arkhe 4 years ago. Thanks to Arkhe, we can easily see where we are going, what we can and cannot sell, and our stock details. This guides us as we plan ahead. We are very pleased to work with Arkhe.

What do you think is the biggest feature that distinguishes Arkhe from its competitors?

I’m pretty far from technology, so I had concerns. But from the first time we met Arkhe, both the trainings we received and the fact that he was always closely followed made me feel very comfortable. This is the biggest feature that distinguishes Arkhe from other companies. It is a very easy software that anyone can use easily. Their wages are not as high as they had intimidated me before. I see Arkhe as our partner. Because without Arkhe’s software, we wouldn’t know where we are and we wouldn’t be able to make plans for the future.
