Padoca is one of the most delicious bakeries in Istanbul Turkey. The smell of delicious sourdough bread that comes to your nose from the moment you enter, invites you to peace. It is a frequent destination for those who want to eat healthy with its gluten-free brown bread with Teff and buckwheat, as well as many other bread types.

Could you briefly tell us about your business? When was it founded, what did you think when you started this business? What is the most important feature that makes your business different from other businesses?
Padoca was founded last November and is a fairly new business. Padoca is a colloquial name given to sweet neighborhood bakeries in Brazil. In fact, it is not only a bakery, but also a common place where everyone in the neighborhood knows each other and shares their memories since childhood… We became the Padoca of Reşitpaşa.
I was in the restaurant business for a long time and had a dream of opening my own place. In this process, I started to work with the intention of making sourdough and healthy bread for my daughter. Afterwards, I improved myself in this business, I read sourdough bread. I came upon it and opened a cafe that revolved around sourdough bread. We don’t just make sourdough bread here; We also have some patisserie products with gluten, gluten-free and some sugar-free. We got Sandwiches and Tartines. We have prepared our breakfast menu, and we are currently preparing for our lunch menu. We are on our way to becoming the cafe of the neighborhood.
We started from the bread here. Bread is warm, unifying. Bread is what brings everyone together, consumed by all families. We wanted people to feel exactly that when they came to our place. As a matter of fact, it happened. Everyone who came found our place very warm. We wanted it to be a warm place like bread. As I mentioned, we try to make what we ate in our own home, not only in bread, but also in all our other products, just as we missed the tastes. Since we are also a small place, we have the chance to easily adapt to every new material, product, and seasonal fresh vegetables and fruits. For example, we will have a new strawberry cake inside right now; we are preparing for it. Since our customers are the people living in our neighborhood, we are in direct contact with them. We know each of our customers personally because they like our bread and they come all the time. Even though we opened recently, we think we have built a loyal customer base. We also have a number of different products that are not offered in other bakeries or cafes. For example, Hala bread that we bring out on Fridays, Babka buns, which are classified as sweet breads, and Jerusalem Bagel sandwiches. We can also meet the gluten-free and sugar-free needs that are in great demand at the moment.
What is the secret of your success? What do you need to do well in this industry? What advice would you give to new entrepreneur candidates who want to enter the sector?
We are still a very new business to see ourselves as very successful. I can say that we are on that path. We do our job very carefully. We have a small team, but we can easily adapt to all situations. We use good material. Since I started this business with the intention of making healthy bread for my daughter, the materials used in all processes, be it flour, are very important to us. We are trying to improve ourselves in a job that we are expert in. Not to mention bread. There’s a lot of hard work behind it. It takes 30 hours to prepare a bread. Bread becomes a delicious and healthy food after 30 hours of fermentation. We try very hard to do a job well and we do it as a team. Hopefully, its consumption in our country will become widespread day by day.
First of all, you need to make a good business plan. Of course, it doesn’t always go according to the plans, but a detailed planning should be done as close to the reality as possible and what you want. Businesses in our country are closing very quickly. Most of them can be caused by lack of planning and lack of programming. Of course, the political and economic developments of our country are also variable. It is necessary to know the gaps and competitors in the sector well. After doing all these researches, you need to improve yourself in the field you want to open. Then you have to be a little brave.
What do you think are the most fundamental problems of the food and beverage industry? Are you optimistic or pessimistic about the future of the industry? Why?
Trained personnel are very lacking. There are good developments and schools about it. We may see better results in the future. Building a team is a very difficult thing. I had a hard time finding staff who could spend long hours with you, share your excitement and convey that excitement to the customer. We created a nice kitchen team. We are building a good service team, but I had difficulties in this process. There are some resources. It’s getting better, you can post ads etc. It’s hard to trust these days. The new generation needs to understand that this is a profession and develop themselves. It is necessary to increase the number of places that train trained personnel, which can help the development of the sector, and to train better qualified personnel.
In my opinion, the food and beverage industry is less affected by the economic crisis. No matter what happens, no matter how unhappy we are, we go out and eat to share something with our friends. Therefore, it is less affected compared to other sectors. However, raw material costs in the sector are rising significantly. These are among the biggest obstacles in front of all of us. In order for restaurant or business owners to withstand such crises, some precautions need to be taken. Studies are being done, but I hope these will be studies that yield more results. In these moments of crisis, new ideas can be eliminated and lagged behind. However, as Turkey, we are open to new things. We need to develop like other countries. We need to support new ideas and try to contribute to their increase. Still, we are on a good track. Hopefully everything will be much better.
What was your reason for choosing Arkhe? What did this choice bring to your business?
We chose Arkhe on recommendation. We had been advised that it was very easy to use and I tried it on that. We really made the right decision. Arkhe provided a lot of support both during and after the installation. In this sense, we are very satisfied. They also support the training of new teams.
What do you think is the biggest feature that distinguishes Arkhe from its competitors?
I have not worked with different brands in this business, but I can say something based on my previous experiences. Much easier to use and organized. In addition, the fact that it is a local company attracted me a lot.
